Impossible is not French!

The great Dr Vino inspired me the other day with a post titled: “Beet salad: impossible food-wine pairing?!?”.

Impossible? On a 14th of July? That sounds like a pure provocation, for a French girl. So after tasting it with a wonderful Chenas, we had another beet salad today with delicious Côte de Brouilly, 2002 from Château Thivin and Morgon, Côte de Py, from Domaine Piron. Not the best pairing to magnify those two excellent wines but at least, and to answer Dr Vino, the pairing was “possible“!

    Maybe the beets are difficult to pair with wine because of their earthy taste. But they can surely be paired with wine, I just don’t know which one would be the best for it.

    I think the earthy quality of beets would naturally pair well with an earthy red wine… gamay or pinot should both work well. For a salad with a vinaigrette dressing, the task becomes more difficult. For me, I would add some fresh chèvre to the salad and pair it with a mineral, acidic white… Chablis perhaps? Yum!
